How to make Masala chai?

To make it, gently boil the spices to release their aroma, add tea leaves, then pour in milk and sweeten with sugar or jaggery. Let everything simmer until rich and aromatic, strain, and serve hot, a comforting cup perfect for celebrating any season.


Masala chai

Vegan Masala Chai Mince Pies


  • Serves: 18–24 small pies

  • Prep time: 30 minutes (plus soaking)

  • Chill time: 30 minutes

  • Bake time: 18–22 minutes


Ingredients


Mincemeat


  • 250 g mixed dried fruit (raisins, sultanas, currants)

  • 50 g chopped dried apricots or dates

  • 40 g mixed peel (optional)

  • 1 medium apple, grated

  • Zest and juice of 1 orange

  • 50 g dark brown sugar or grated jaggery

  • 40 g coconut oil or vegan butter, melted

  • 2 tbsp dark rum, brandy or whisky

  • or extra orange juice for an alcohol-free version

  • 2 tsp very strong black tea or masala chai

  • 1½ tsp ground cardamom

  • 1 tsp ground cinnamon

  • ½ tsp ground ginger

  • ¼ tsp ground cloves

  • Pinch of nutmeg

  • Pinch of freshly ground black pepper


Vegan pastry


  • 250 g plain flour

  • 125 g vegan baking block, cold and cubed

  • 50 g icing sugar

  • Pinch of salt

  • 3–4 tbsp cold water

  • A little plant milk for glazing


To finish


  • Icing sugar

  • Optional: crushed pistachios


Method

  1. Prepare the masala chai mincemeat

Mix all the mincemeat ingredients in a large bowl until everything is evenly coated. Cover and leave at room temperature for at least an hour so the fruit can soak up the spices and citrus. If you have time, rest it overnight in the fridge — the flavour deepens beautifully.

  1. Make the pastry

Stir the flour, icing sugar and salt together. Rub in the cold vegan block with your fingertips until it looks like breadcrumbs. Add the cold water a spoon at a time until the dough just comes together. Don’t overwork it. Flatten into a disc, wrap and chill for 30 minutes.

  1. Assemble

Preheat your oven to 190°C (170°C fan). Lightly grease a shallow bun or mince pie tray.

Roll the pastry to about 3 mm thick and cut out circles to line the tins. Spoon a teaspoon of mincemeat into each. Cut smaller circles or stars for the lids and place them on top, pressing gently to seal. Brush lightly with plant milk.

  1. Bake

Bake for 18–22 minutes until golden. Let them cool for five minutes in the tin, then move to a rack. Dust with icing sugar while still warm.
